Here’s what’s in store for you:

Welcome Drink (9:30 AM – 9:45 AM) Kick off your preservation adventure with a refreshing welcome drink, featuring a choice of herbal infusion or fruit-infused water, setting the stage for a day filled with creativity and culinary exploration.

Introduction to Food Preservation (9:45 AM – 10:15 AM) Embark on a journey through the rich tapestry of food preservation techniques, from fermenting to pickling and jam-making. Discover the art and science behind these methods and learn how to harness the power of preservation to extend the lifespan of seasonal bounty and reduce food waste.

Trip to the Kitchen Garden (10:15 AM – 11:00 AM) Embark on a guided tour of our flourishing kitchen garden, where you’ll handpick an array of fresh fruits, vegetables, and herbs to use in our preservation class. Connect with nature’s bounty and select the finest ingredients to elevate your preserved creations.

Session 1: Fermentation (11:00 AM – 12:30 PM) Dive into the captivating world of fermentation as you discover the magic of beneficial bacteria in transforming vegetables into tangy delights like sauerkraut or kimchi. Learn the essentials of sterilization and equipment, then roll up your sleeves to craft your own fermentation jars, infusing them with your favourite vegetables and seasonings.

Lunch Break (12:30 PM – 1:30 PM) Replenish your energy with a delectable lunch featuring a curated selection of preserved foods, including fermented vegetables, pickles, and artisanal cheeses, accompanied by crusty bread and fresh salads.

Session 2: Pickling (1:30 PM – 3:00 PM) Unveil the artistry of pickling as you delve into the world of vinegar-based brines. From classic pickles to relishes and chutneys, discover the myriad flavours and textures of pickled delights. Armed with recipes and techniques, create and can your own pickled vegetables or fruits, ensuring they’re sealed and stored to perfection.

Session 3: Jam and Jelly Making (3:00 PM – 4:30 PM) Embark on a sweet journey into the realm of jam and jelly making, where fresh fruits, sugar, and pectin unite to create luscious spreads bursting with flavour. Learn the secrets of fruit selection, sugar ratios, and pectin levels, then unleash your creativity as you cook and jar your own jams or jellies, experimenting with delightful fruit combinations and aromatic flavourings.

Conclusion and Tasting (4:30 PM – 5:00 PM) Wrap up your preservation odyssey with a delightful tasting session, where you’ll sample an array of preserved foods crafted during the class. Reflect on the day’s lessons as you savour the fruits of your labour and depart with jars of your own preserved delights to enjoy at home.
